Featured Recipe: Peanut Butter Muffins
Ann Beebe (Associate Concertmaster) . . . . . . page 13

Ann says: "I love muffins for breakfast, and these at least
give the appearance of being healthful, with whole-wheat flour and no eggs."

1/4 cup peanut (or other nut) butter 2 cups whole wheat pastry flour
1/4 cup honey 1 Tbsp. baking powder
1/4 cup canola oil 1/2 tsp. salt
1 1/2 cups milk  

Mix together nut butter, oil and honey in medium bowl. With a wire whisk, add milk a little at a time, until combined. In a separate bowl, stir together flour, baking powder and salt, then add to the liquid mixture, stirring just to combine. Do not beat. Fill oiled muffing tins 2/3 full, and bake at 350° for 20-25 minutes. Makes 12 muffins.
